This recipe lets the vanilla shine through while keeping things easy enough for any home baker.
Ingredients
225 g (1 cup) unsalted butter, softened
300 g (1 ½ cups) granulated sugar
1 large egg, at room temperature
1 teaspoon Dadora Pure Tahitian Vanilla Extract (or a pinch of ground vanilla powder)
320 g (2 ½ cups + 2 tbsp) all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
2–3 tablespoons vanilla sugar (for rolling — see tip below)
Tip: Don’t have vanilla sugar on hand? Simply mix granulated sugar with a bit of ground vanilla powder or store a few vanilla beans in a jar of sugar for a couple of days.
Instructions
Preheat & prep: Heat oven to 350°F (180°C). Line 2–3 baking sheets with parchment paper.
Cream the base: In a stand mixer with the paddle attachment, beat the butter and sugar on medium-high speed until pale and fluffy, about 3 minutes.
Add flavor: Mix in the egg and vanilla until fully combined.
Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Add this mixture to the wet ingredients and mix on low until just incorporated. Don’t over-mix — tender cookies need a gentle touch.
Shape: Scoop about 2 tablespoons of dough per cookie. Roll each portion into a ball, then coat lightly in vanilla sugar. Place on prepared baking sheets, spacing at least 2 inches apart.
Bake: Bake for 9–11 minutes, or until the cookies look set around the edges but are still soft in the center. They’ll puff in the oven and settle as they cool.
Cool & enjoy: Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack. Store in an airtight container at room temperature.
